What is Sake?

Sake was first brewed in Japan after the cultivation of wet rice was introduced around 300B.C. Though the origins of Sake can be traced in China as far back as 4000B.C. It was Japan that started the mass production of this simple but delicious rice wine. Sake has played a very important role in Japanese culture and history. Different regions in Japan have their own variety of Sake. The use of local rice varieties, spring water and fermentation processes gives each variety its own distinctive flavour because Sake is meant to be enjoyed with friends and family, tradition holds that a person must never pour their own Sake ; instead another person pours for you and you do the same for them.
